Raise your hand if you love steak! These steak bites are a super fun way to get your meat fix, my kids ask for them constantly. Not to mention, steak and garlic butter are just a perfect combination, wouldn’t you agree?

How to make steak bites with garlic butter

This recipe uses sirloin steak cut into small pieces. I chose sirloin because it’s tender and flavorful, but it’s not super expensive. Other great choices would be tenderloin, rib eye, or New York strip steak. The steak pieces are cooked with olive oil, butter, garlic, salt, pepper and sprinkled with parsley.  That’s it!

The key to this recipe is an insanely hot pan so that you get a nice crust on your meat. Butter can burn at high temperatures, so I typically start the meat in a little olive oil for the browning factor, then add butter for flavor. A cast iron skillet is a great choice for these steak bites as that type of pan can get REALLY hot!

The steak only needs to cook for a few minutes, and the garlic gets added at the end so it doesn’t burn. Add a little parsley for flavor and color, and you’ve got an amazingly delicious appetizer or main course.

When I made these steak bites, my kids and I all grabbed some toothpicks and ate the meat as a snack straight from the pan. It also makes a unique main course over potatoes or with a side of bread to sop up all that garlic butter. However you serve these steak bites, everyone is sure to love them!

Ingredients 

  • 1 1/4 lbs sirloin steak cut into small cubes
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 teaspoons minced garlic
  • salt and pepper to taste
  • 1 tablespoon minced parsley

Instructions 

  • Heat the olive oil in a large pan over high heat. Season the steak with salt and pepper to taste.
  • Place the steak in the pan in a single layer; you may have to work in batches depending on the size of your pan. Cook for 3-4 minutes, stirring occasionally, until golden brown. Repeat with remaining meat if needed.
  • Add the butter and garlic to the pan; cook for 1-2 minutes, stirring to coat the meat in the sauce.
  • Sprinkle with parsley and serve.

Notes

  1. If you don't have sirloin, you can also use tenderloin, rib eye, or strip steak.

    Love love love this recipe! We are steak people and never in a million years thought I’d like something like this! But it is wonderful. I want to try what another reviewer suggested and double the butter and garlic and add onions and mushrooms. Sounds ever more wonderful! I have used sirloin and it turned out great but filet tips or filet is the best. We like ours rare to medium rare so I start out with a very hot skillet and sear them quickly to keep them red/pink and juicy inside. A couple red pepper flakes also gives it a little kick.

  2. I doubled the butter and added some chopped onions and a bag of frozen green beans. My low carb hubby loved it.

  4. This is now a staple at my house but to make it a meal, double butter and garlic add mushrooms and onions sauté before adding meat back the add cooked ,drained Ramen noodles with seasoning. Its great

    Can this be partially cooked ahead of time and then finished the day of? I realize it doesn’t take that long but if you’re cooking for a large crowd, it takes a while. BTW I did make this about a year ago and it was delicious!

    1. I think if you did that the meat would be a lot more likely to dry out since you’re essentially cooking it twice!

    2. If you’re making for a large crowd you could just sear the outside of the meat then put it in foil in the oven with the butter and garlic on like 425°-450° and it would take a lot of the effort out 😉

      I did just a little cheating to your original recipe.
      Prepared tomatoe stew sauce on the side. Just took meat in the dish. Added the sauce. Extra spicy flavourful butter left in the pan , used it on whole wheat breadsticks……we all thank you Ma’am forever !

  6. This is more of a question than comment but I’m wondering if i could sear the steak and keep warm in a slow cooker? I am hosting a 60th birthday party for 30 and would like to serve these as part of the buffet.

    1. I think that would work, you’d want to serve them pretty quickly as they may get tough if they sit in the slow cooker for hours.

    I can’t believe I’ve been cooking for kids for 17 years and have never made something like this before. It’s so easy and delicious! My daughter told me to always make steak this way from here on out. And I think I will. Served with buttered new potatoes and corn on the cob. Excellent meal. Thank you!

  8. Couldn’t you make a roux with equal parts of butter and flour and make a gravy with the sauce left in the bottom of the pan? I would think the gravy would be wonderful!

  9. I make this often and its wonderful I use roasted garlic mashed potatoes my family loves it very please . I use alot of you recipes they are wonderful

    1. There’s not a ton of sauce to serve over pasta unless you want to double the sauce part! I recommend mashed potatoes or some other type of potato.

    Do you think this would work with a London Broil? Also The cubes in the video appear larger than the pictures. I was just wondering if cutting the meat too small results in a tougher steak bite.
